NDSCS sophomore Demi Uffelman signs with New Mexico Highlands
North Dakota State College of Science sophomore pitcher Demi Uffelman signed a National Letter of Intent with Division Two program New Mexico Highlands University in Lakewood, Colorado. The Cowgirls compete in the Rocky Mountain Athletic Conference.

Uffelman had just two appearances last spring prior to COVID-19 ending the 2020 season prematurely, but the Montana native was impressive. Uffelman was 2-0 in her two appearances with a 1.27 ERA and 16 strikeouts. She posted a 10.18 K's per 7 innings mark, walking just two batters.
Kevin Jannusch – the head softball coach at New Mexico Highlands University – had this to say about Uffelman: "Had Demi played a full season; her numbers surely would have been gaudy. She's long and tall and very athletic."
Offensively, 5 of her 9 hits were doubles. In the small sample of 2020, Uffelman was hitting .529 with a team-leading 9 RBIs and 8 runs, which was tied for second. NDSCS was 6-0 to start the 2020 season.
As a prep at Hardin (MT) High School, Uffelman earned Super State honors from the Great Falls Tribune, throwing every inning for her team as a senior. She ended that campaign with a 16-4 record in the circle with 204 strikeouts to go with 9 homeruns and 51 RBI. Yielding a 3.84 GPA, she was named Academic All-State as well. Jannusch added, "Demi is a focused student and a focused athlete. I was immediately impressed with her maturity. She's a great addition for an already strong recruiting class both on the field and off."
